A tip on getting your fresh chicken tender. Make sure the meat is cold, cold, cold (refrigerate for at least 24 hours) before you freeze it. When you freeze a warm chicken it will be tough & chewy. You need to let the meat relax from rigor mortis before freezing it.

Barn chores

When we moved to Hickory Corners, the barn was used by the previous owner as a pool hall. There were booze bottles stashed in mouse-infested cabinets, and broken glass littered the goat-shit-encrusted barn floor. And, for some strange reason, dozens of matchbooks.
Robinson and I decided to clear space for the first stalls. Armed with shovels and a power washer we dove in. Old hay becomes solid after who knows how many years; it’s like trying to dig through OMB boards. The power washer, which I resisted using at first, made easier work of the hay removal. It broke up the layers just enough to allow me to dig.

After many hours and cart loads, we have half of the first stall space cleared. This was a good day. Hard work, yes, but I didn’t end up flat on my back from working too hard — although, my legs were rubbery. On Wednesday, we’ll finish this up and get to work on building the stall.

I did end up hurting my back: At work, I reached for my coffee mug and something popped in my upper back. The irony of getting fit for farm work is that my body can’t handle all the sitting.

Eggs in the Incubator

Here are my ebay purchased, buff colored Runner Duck eggs in the incubator. Today is day 8, so yesterday all 15 of the eggs I started with were candled and this morning I took the 6 duds to the trash (down to 60% in my hatch rate already). I couldn’t bear to do it last night. Like somehow a miracle would occur and this morning all of my eggs would be viable. I did manage it this morning because I read in my Storey’s Guide to Raising Ducks that at the least the bad eggs put off a gas that can harm the healthy eggs and at worst I might have a rotten egg explode all over the inside of my borrowed incubator. Just the thought makes me nauseaus.
Anyway, I wish I could take a picture of the eggs being candled because it’s amazing. There is a little black dot in the center with a spidery network of veins coming out in an array around it. Hopefully I can get someone over here to share it wih soon… perhaps I can share it with my husband when he gets home tomorrow.
